It's been a while kids and "'Lissa Loved It" has been AWOL, but I have renewed energy, focus and excitement and promise to get things back on the road. My goal is to post a minimum of two recipes a day so standby, make comments and feel free to send me recipes that you think might win the internationally coveted title of a "'Lissa Loved It".
 
Summer has been a good one in the garden and what has re-inspired me has been the amount of green beans, tomatoes, cucumbers and basil in the garden. Because it represents the quintessence of English summer cooking, it seems apt that the first few recipes to relaunch "'Lissa Loved It" will come from Delia Smith's brilliant Summer Collection (BBC Books, London, 1993). Remember, there are many "good" recipes, fewer "great" recipes, but a rare few that earn the distinction of |'Lissa Loved It". She's tough and these recipes are blinding. So prepare your taste buds and let's get cooking...
 
Name: Sweet Pepper and Coriander (Cilantro) Relish

Date(s) cooked: 7th May, 2007 and 10th April, 2010

Comments: "Day before my fortieth birthday. A lovely alternative to a regular Southwest salsa"; "Mama raved and raved. Made as part of a Delia "here comes summer" binge".

Recipe:

1 green chili
1 red pepper
1 small red onion
4 Tbs coriander (cilantro) leaves
4 Tbs lime juice
2 large tomatoes -- skinned, deseeded and chopped
salt and pepper

Place all the ingredients in a food processor and blend evenly to the stage where it looks like everything has been chopped minutely  small but hasn't lost its identity. Leave on one side (covered) in a cool place, and stir well before serving.
